About Arthotel Blaue Gans

Blaue Gans is a living place shaped by history and attitude. Housed in a building ensemble dating back to the 14th century, it is one of Salzburg's oldest continuously used houses, combining historic substance with contemporary design and art. With over 300 original artworks, the house is both hotel and exhibition space – art runs throughout the entire property, giving every area its own story.

The kitchen forms the heart of Blaue Gans. Head chef Max Sampl represents a clear, reduced culinary approach, combining high-quality alpine products with Mediterranean lightness. This line is rooted in the origins of the house: the founding Aufner family once traded between Salzburg and Venice, bringing new culinary influences back home. Today, this exchange between north and south is interpreted in a contemporary way.

The restaurant comprises the historic vaulted dining rooms, the brasserie with Campari bar, the Mediterranean garden and the wine archive. The experience is complemented by personal recommendations from the team – whether discovering the art within the house, exploring the city by bike, following individual jogging routes or taking the Walk of Modern Art, which starts right outside the door.

Blaue Gans is for guests who don't just want to stay somewhere, but want to be part of a place – and experience Salzburg consciously, individually and with a close connection to the city.

Concierge Recommendation

Like the Salzburg Festival, it is both a guardian of tradition and a trendsetter. The wonderful old vault, surrounded by contemporary art, or the inviting garden are great settings to enjoy their home-made food. [...]
